Savory Dutch Baby
This Savory Dutch Baby is a baked puffed pancake made from eggs, flour, milk, and butter, baked in a hot cast iron skillet until puffed and golden. Topped with shredded mozzarella and fresh chives, it offers a light, slightly crisp texture with a tender center, making it suitable for breakfast or lunch.
Ingredients
- 3 large egg room temperature
- 1/2 cup milk room temperature, whole
- 1/2 cup all-purpose flour
- ½ teaspoon salt
- 4 tablespoons butter melted and cooled, unsalted
- 1/2 cup mozzarella cheese shredded
- 1 tablespoon chives sliced
Instructions
- Preheat oven to 425˚F.
- Place a 10” cast iron skillet into the oven and preheat.
- Place eggs, milk, flour, salt, and 2 tablespoon butter into the well of a blender and blend for 2 minutes, ensuring the batter is thin and smooth. Set aside.
- Pour remaining butter into the hot skillet and swirl to coat the entire surface.
- Pour the batter into the skillet and sprinkle with cheese.
- Bake the Dutch baby for 20 to 25 minutes or until puffed around the edges and cooked through.
- Remove from oven and top with sliced chives.
Notes
- Makes one 12-inch Dutch Baby serving about two to three people.
- Use a preheated cast iron skillet for best puff and texture.
- Ensure all ingredients are at room temperature to help batter blend smoothly and rise well.
