Ingredients

  • 2 egg large
  • 1 cup milk whole
  • 1 1/2 cups saltine crackers crushed
  • 30 ounces corn drained, canned
  • 15 ounces canned creamed corn
  • 1/4 cup butter melted, unsalted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper ground

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, whisk the eggs until frothy.
  3. Stir in the whole milk and half of the crushed saltine crackers until well combined.
  4. Add the drained corn, creamed corn, melted butter, salt, and black pepper to the bowl, mixing thoroughly.
  5. Pour the corn mixture into the prepared baking dish, spreading it out evenly.
  6. Sprinkle the remaining crushed saltine crackers over the top of the corn mixture.
  7. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is set.
  8. Let the scalloped corn rest for a few minutes before serving warm.
