Scottish Fruit Slice, Fruit Squares, Fly Cemetery or Fly's Graveyard (Oh My!)

This Scottish Fruit Slice features a short crust pastry enclosing a filling of raisins, Zante currants, chopped apple, and brown sugar. The layered pastry bake forms a sweet, dense fruit slice with a flaky crust. The top is brushed lightly with beaten egg and sprinkled with caster sugar to add a delicate glaze and texture after baking. Served cut into squares, it offers a rich, fruity confection.

Ingredients

  • 1 ⅔ cups raisins
  • ½ cup currants Zante
  • 1 medium apple or sour cooking apple, chopped into small pieces, Granny Smith
  • 1 cup brown sugar
  • 1 recipe short crust pastry printable recipe card below (link in notes)
  • 1 egg beaten, to brush the top (optional, if you want to omit egg from the recipe)
  • 1 Tbsp caster sugar or Baker's Sugar to dust the top

  1. Preheat the oven to 425°F (215°C)
  2. Begin by stirring the dried fruit, chopped apple and brown sugar together in a bowl. Set aside.
  3. Cut the pastry in half, and roll out the first half on a sheet of waxed (greaseproof) or parchment paper thinly (about ⅛") into a rectangle to line the bottom of a 9"x13" baking pan (about 11" x 15"). Trim the rough edges.
  4. Add the filling into the pastry lined pan.
  5. Roll out the other half of the pastry to cover the top. Wet the edge of the bottom pastry, then carefully lift the second pastry layer and place on top of the fruit. Press edges together to seal.
  6. Lightly mark the top into squares or slices, then brush the top with the beaten egg and sprinkle the caster/Baker's Sugar over the top. Bake near the middle of the oven for about 30 minutes or until golden brown.
  7. When completely cool, cut into squares or slices.

Notes

  • Use a good-quality short crust pastry for a tender, flaky crust; a printable recipe card is linked within the notes for the pastry.
  • Brushing the top with beaten egg before sprinkling sugar adds color and a slight glaze but can be omitted for an egg-free version.
  • Cut the slice into squares only after the fruit slice has completely cooled to prevent crumbling.
