Seafood Baked Potatoes

Seafood baked potatoes are loaded with delicious seafood and a creamy sauce. These seafood stuffed potatoes are so good and so easy.

Ingredients

  • 5 Russet potatoes
  • 2 tablespoon truffle oil
  • 2 teaspoon sea salt flakes
  • 1 teaspoon coarse black pepper
  • 4 oz cream cheese softened
  • 4 tablespoon salted butter softened
  • 2 teaspoon garlic paste
  • ¼ cup minced crab meat
  • Pinch red pepper flakes
  • ½ teaspoon blackened seasoning
Blackened Shrimp
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon blackened seasoning
  • ½ lb small shrimp peeled deveined and tails removed
  • ¼ cup green onions diced
Cajun cream sauce
  • 1 tablespoon butter
  • 1 tablespoon all purpose flour
  • 1 teaspoon chili paste
  • 1 cup heavy cream
  • ½ cup Monterey jack cheese shredded

Instructions

  1. Get out and measure your ingredients.
  2. Preheat the oven to 350 degrees.
  3. Wash and dry the potatoes. Pierce several times with a fork. Brush with truffle oil then season with sea salt and black pepper. Place into the oven and bake for one hour.
  4. Remove potatoes from the oven and let cool for five minutes.
  5. Slice the potatoes in half.
  6. Then scoop the insides into a bowl with a spoon. Leave a thin layer along the sides and bottom.
  7. Increase the oven temp to 400 degrees.
  8. Preheat a skillet over high heat.
  9. Add softened cream cheese, butter, garlic paste, minced crab, pinch of red pepper flakes, and blackened seasoning to the bowl with the potato flesh.
  10. Use a hand mixer to blend until smooth.
  11. Spoon mixture back into the potatoes until filled.
  12. Place into the oven and bake for 15 minutes.
  13. Meanwhile prepare the blackened shrimp and Cajun cream sauce.
Cajun Cream Sauce

  1. Heat a saucepan over medium heat. Add the butter and melt. Once melted, add the flour and whisk.
  2. Once the flour starts to bubble, whisk in the chili paste. Cook for 2 minutes, then slowly add the cream whilst stirring constantly.
  3. Once boiling, lower the heat to a simmer and simmer for 10 minutes.
  4. Stir In the cheese and Cajun seasoning.
Blackened Shrimp
  1. Place shrimp in bowl. Add olive oil.
  2. Add blackened seasoning and toss.
  3. Stir until seasoning is evenly distributed.
  4. Add to the cast iron skillet and sear for 1 minute per side.
  5. Add shrimp to the top of the potatoes. Drizzle with cream sauce.
  6. Garnish with green onions. Serve.
  7. Enjoy!
