Sesame Shrimp Noodles

Ingredients

  • 16 oz egg noodles (found in the refrigerated section of your supermarket. You can also use linguini, spaghetti or angel hair pasta)
  • 2 Lb uncooked shrimp peeled and deveined
  • 12 oz mushrooms mix and match any kind you like
  • 1 Tablespoon Sriracha or Chili Oil
  • 2 scallions chopped
  • 2 garlic cloves minced
  • 1 Teaspoon ginger minced
  • 1 Tablespoon rice vinegar
  • 3 Tablespoons soy sauce
  • 1 Teaspoon sugar or Truvia
  • 2 Tablespoons sesame oil
  • salt and pepper to taste

Instructions

  1. Cook your noodles or pasta according to the package directions. Drain and return to the pot. Pour in 1 tablespoon of sesame oil and mix. Set aside
  2. In a bowl, combine the soy sauce, vinegar, sugar and Sriracha.
  3. In a skillet over low heat, add 1/2 Tablespoon of the sesame oil, scallions, ginger and garlic
  4. Cook on low heat until the garlic softens. Add the mushrooms and stir until they shrink in size and soften. About 3-4 minutes. Add salt and pepper.
  5. Remove the mushrooms from the skillet and throw them in the big pot with the noodles.
  6. Meanwhile, in the skillet you cooked the mushrooms in, add the remaining 1/2 Tablespoon of the sesame oil over medium heat. Cook the shrimp until they turn pink. About 3 minutes. DO NOT OVERCOOK.
  7. Add the shrimp to the pot where the noodles and mushrooms are
  8. Return the noodle pot to the heat and add the sauce. Mix and check for seasoning. If needed, make the necessary adjustments
  9. Remove from heat and serve immediately
  10. Garnish with scallions and sesame seeds if desired
