Ingredients
- 2½ cups fine durum wheat semolina
- 1 cup all-purpose flour
- 2 tablespoons ground turmeric
- 2 cups whole milk
- 2¼ cups caster sugar
- 1 cup vegetable oil
- 1 tablespoon baking powder
- 2 tablespoons Tahini
- 1 oz pine nuts

- Cake tin (12 x 8 inch / 30 x 20 cm)
Instructions
- Preheat the oven to 499 F (200°C).
- In the bowl of a stand mixer, combine the semolina, flour, baking powder and turmeric.
- In a large bowl, dissolve the caster sugar in the milk, then pour over the semolina mixture.
- Using the beater tool, mix everything together at low speed while gradually adding the oil until a smooth batter is obtained.
- Brush the bottom and edges of a 12 x 8 inch (30 x 20 cm) lined cake tin with tahini.
- Pour in the batter.
- Bang the cake tin on the work surface to even out the surface of the cake, and to remove any air pockets.
- Sprinkle the pine nuts on top.
- Lower the oven temperature to 350 F (180°C), and bake for 25 to 30 minutes until golden brown.
- Let cool completely, then cut the sfouf into squares or diamonds.
