Shaved Brussels Sprouts Salad

Ingredients

  • 1.5 lbs Brussels sprouts
  • 4 ounces goat cheese
  • ½ cup cranberries
  • ½ cup candied pecans
Dressing
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • ¼ tsp kosher salt
  • 1 small garlic clove finely minced

Instructions

  1. Whisk together ingredients for dressing, set aside.
  2. Wash Brussels sprouts, remove any damaged or discolored leaves and trim off ends. Use a sharp knife to slice the brussels sprouts very thinly, or you can use a mandolin to do this if you prefer. You can also use a slicer attachment on a food processor if you have one.
  3. Add brussels sprouts to a large bowl, toss with dressing. Scatter cranberries, pecans and goat cheese on top and serve.
