Shaved Fennel Salad

This shaved fennel salad is as delicious as it is beautiful! Flavorful fennel, apples, and orange are served over fresh arugula - then topped with crunchy walnuts and a homemade citrus vinaigrette dressing. Yum.

Ingredients

For the salad:
  • 4 cups arugula
  • 1 fennel bulb
  • 1 apple large
  • 1 orange medium
  • ½ cup Parmesan Cheese curls
  • ¼ cup walnuts
For the dressing:
  • ⅓ cup olive oil
  • 3 tablespoons orange juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon parsley minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Place the arugula on a large platter and set aside
  2. Use a mandolin to slice the fennel thin, then slice the apple and orange into thin slices using a knife
  3. Place the fennel, apple, orange, parmesan and walnut on top of the arugula and set aside
  4. Prepare the dressing but whisking together the olive oil, orange juice, red wine vinegar, maple syrup, parsley, salt and pepper until smooth
  5. Pour dressing over the salad right before serving
