Shaved ice from frozen nectarine with yoghurt, roasted almonds and honey

Lovely sweet and refreshing dessert. Coconut yogurt with shaved frozen nectarine, roasted almonds (or tiger nuts) and honey.

Ingredients

  • 1 1 serving coconut yoghurt
  • 1 1 tbsp shaved tigernuts (chufa)
  • 1 1 or 2 nectarines
  • 1 1 tbsp raw honey
  • 1 1 tbsp slivered/ shaved almonds

Instructions

  1. Place a nectarine in the freezer overnight.
  2. Place a bowl in the freezer or refrigerator to let it cool.
  3. Roast the almonds or tiger shavings in the pan and let cool. If you want to eat as raw as possible skip this step.
  4. Spoon the yoghurt into the cold bowl. Shave the nectarine over it. Top with the almonds (or tiger shavings) and honey. Eat right away, the nectarine shavings will melt quicly.

Notes

  • Only start shaving just before serving.
