Sheet Pan Gnocchi Meal Prep

Made in under 30 minutes, this Sheet Pan Gnocchi Meal Prep is healthy, filling, and also perfect as a last minute dinner!

Ingredients

  • 500 grams gnocchi
  • 1 red onion
  • 2-3 cups chickpeas
  • 1 bell pepper
  • 3 tbsp olive oil
  • 1-2 tbsp SEASONING I used tomato, basil, oregano seasoning mix
  • lemon to taste
  • parmesan to taste

Instructions

    Cup of Yum
  1. Heat oven to 425F.
  2. On a sheet pan, add in the gnocchi, red onion, chickpeas, and bell peppers.
  3. Drizzle on olive oil and seasoning. Using your hands, mix everything together and spread the ingredients in a single layer on the sheet pan.
  4. Bake for 20-25 minutes, giving everything a stir half way through.
  5. When done, serve with a squeeze from a lemon wedge and some parmesan cheese.
