Sheet Pan Gnocchi with Sausage and Broccoli

One of the simplest meals in one! Includes a hearty starch, a rich protein and a nutritious veggie all cooked together on one sheet pan in a hot oven until lightly browned and the flavors have melded together.

Ingredients

  • 16 oz. potato gnocchi or refrigerated gnocchi, shelf stable
  • 1 lb. broccoli cut into bite size pieces, large stem reserved for another use, heads
  • 3 Tbsp olive oil
  • 1 Tbsp minced garlic (3 cloves)
  • salt and black pepper, to taste
  • 1 lb. Italian sausage hot or mild
  • 1//3 cup fine grated Parmesan Cheese

Instructions

  1. Heat oven to 425 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.
  2. Place gnocchi and broccoli on baking sheet. Sprinkle with garlic, and season with salt and pepper. Drizzle evenly with olive oil and toss to coat. Spread mixture out even.
  3. Break off 1-inch pieces of sausage and dot over gnocchi and broccoli.
  4. Bake in preheated oven until sausage is cooked through and broccoli is slighty browned, about 20 minutes.
  5. Remove from oven and sprinkle with parmesan cheese.
