Sheet Pan Honey BBQ Chicken Dinner

Ingredients

  • 1.5 lb. boneless chicken breast
  • 1 lb. baby gold potatoes halved
  • 1 lb. fresh green beans halved
  • 2 Tbsp olive oil (30g) divided
  • 2 Tbsp BBQ Sauce (30g)
  • 1 Tbsp honey (21g)
Spice Mix:
  • 2 Tbsp brown sugar
  • 2 Tbsp paprika
  • 2 tsp each: salt, garlic powder, onion powder, chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

  1. Preheat the oven to 425 degrees F. Line a baking sheet with foil (for easy clean up).
  2. In a small bowl, whisk together the spice mix ingredients.
  3. Add the potatoes to the sheet pan. Drizzle with olive oil and sprinkle with about 1/3 of the spice mixture. Toss to evenly coat. Bake potatoes for 15 minutes.
  4. Meanwhile, prepare the chicken. Slice the chicken breasts in half lengthwise (like butterflying, but all the way). Season with the remaining spice mix, rubbing on both sides so it’s fully coated.
  5. Remove the pan from the oven. Move potatoes to one side, add the green beans and drizzle with the remaining olive oil. Sprinkle with a little salt. Toss with the potatoes then move to the outer rim to make room in the center for the chicken. Add the chicken and return to the oven for another 10-15 minutes (will vary depending on thickness of chicken).
  6. Mix together BBQ sauce and honey and brush over the tops of the chicken. Broil on high for 3-5 minutes or until potatoes start to char. Keep a close eye on it so it doesn't burn. Let the chicken rest for 5 minutes before slicing. Serve with more BBQ sauce if desired and enjoy!

Notes

  • Cooking Tips!
  • Cut the chicken evenly. The best way to make sure your chicken cooks evenly is to make sure to cut the chicken as uniform in size as possible. This will help all the chicken cook at the same speed and you won’t over cook the smaller pieces.
  • Don’t overcook the chicken. Overcooking leads to tough, dry chicken, which we don’t want! To prevent this, you can actually cook chicken until it reaches 155F and allow carryover cooking to ensure it reaches 165F. This helps keep your chicken moist and juicy and avoids overcooking. To check the internal temperature of the chicken, I recommend using an instant-read thermometer!
  • More flavor. If you want the most flavor, you can cut your chicken into cubes and marinate with the bbq sauce in a ziplock bag for 30 minutes (up to overnight) before mixing with the veggies.
