Sheet Pan Lemon Garlic Salmon with Broccolini

Ingredients

  • 3 pieces salmon
  • 2 tablespoon olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 bunch broccolini
  • 1 cup Cherry or grape tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 lemon
  • 1 teaspoon dried basil

Instructions

  1. Preheat oven to 400 degrees.  Place salmon on sheet pan and drizzle with 1 tablespoon of olive oil and salt and pepper.
  2. Place vegetables in a bowl and toss well with 1 tablespoon oil, 2 tablespoon minced garlic and more salt and pepper.  Put veggies on sheet pan around the salmon.
  3. Roast for about 15-19 minutes or until salmon flakes.
  4. In another small bowl add 2 tablespoon lemon juice, 2 teaspoon lemon zest and 1 tablespoon honey.  Whisk well.
  5. Pour over salmon and veggies after removing from oven and serve immediately.  Add more salt and pepper to taste.
