Sheet Pan Roasted Asian Vegetable Medley

This simple recipe for sheet pan roasted Asian vegetable medley is tasty, easy, and ready in about 20 minutes. It makes the perfect side dish for any favorite Asian entree.

Ingredients

  • ½ onion chopped
  • 2 cups broccoli florets
  • 2 cups cauliflower chopped
  • 1 red bell pepper chopped
  • 1 zucchini or yellow squash sliced
  • ¼ cup sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • salt and pepper to taste
  • Sesame seeds, for garnish

Instructions

  1. Preheat oven to 400 degrees. In a small bowl whisk together sesame oil, soy sauce, garlic powder, and ginger.
  2. In a large bowl combine veggies. Pour oil mixture over the veggies and toss to coat. Transfer veggies to a large sheet pan and spread out evenly across the pan.
  3. Bake for 10-15 minutes until veggies are fork-tender. If desired, you can broil on high for an additional 2-3 minutes at the end.
  4. Garnish with sesame seeds and serve.

Notes

  • Add your favorite protein - chicken, shrimp, beef etc - to round this out into a hearty meal!
