Ingredients

  • 1 pound smoked sausage , cut into 1/2 inch slices
  • 4 medium red potatoes , cut into 1 inch cubes
  • 1/2 yellow onion , chopped
  • 1 red bell pepper , cut into 1 inch cubes
  • 1 zucchini , cut into 1/2 inch thick slices
  • 4 tablespoons vegetable oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  1. Preheat oven to 375 degrees.
  2. Toss the smoked sausage, potatoes, onion, red bell pepper, zucchini, vegetable oil, Italian seasoning, salt, and pepper together in a bowl.
  3. Spread onto a baking sheet.
  4. Bake for 35-40 minutes or until potatoes and sausage are browned and cooked through.
