Ingredients

  • 1 ½ pounds Shrimp peeled and deveined, jumbo
  • 1 red bell pepper sliced into thin strips
  • 1 bell pepper sliced into thin strips, orange
  • ½ red onion sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning homemade
  • lime for garnish, wedges; optional
  • cilantro for garnish, wedges; optional

Instructions

  1. Add the shrimp, peppers and onion to a large mixing bowl.
  2. Drizzle the olive oil on top and toss.
  3. Sprinkle the fajita seasoning evenly over the top and toss again to combine, making sure everything is well coated in the seasoning and olive oil. Cover and chill in the fridge for 30 minutes.
  4. Preheat oven to 450°F.
  5. Pour everything onto a sheet pan that’s been brushed with olive oil.
  6. Bake on the upper ⅔ rack of your oven for 8 minutes, then turn the oven to broil and cook another 2 minutes or until the shrimp and veggies are cooked through and slightly charred.
  7. Serve with the (optional) cilantro and lime wedges over the tops.
