Sheet Pan Smoked Sausage Tortellini

This sheet pan smoked sausage tortellini is the perfect easy weeknight dish. Smoked turkey sausage, sweet peppers, onions and cheese tortellini come together for a simple but delicious dinner that takes 40 minutes. Yum!

Ingredients

  • 1 onion thinly sliced, sweet
  • 1 pound mini sweet peppers thinly sliced
  • 4 tablespoons olive oil
  • salt kosher salt
  • black pepper kosher salt
  • ½ teaspoon garlic powder
  • 1 pound smoked turkey sausage cut into rounds
  • 20 ounces cheese tortellini
  • ½ cup Parmesan Cheese plus more for topping, finely grated
  • 3 tablespoons chives chopped fresh

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Place the onions and peppers on a baking sheet. Toss with 2 tablespoons of the olive oil and a big pinch of salt and pepper, along with the garlic powder. Toss well.
  3. Place the rounds of smoked sausage on top of the peppers and onions, kind of nestled into the sheet pan.
  4. Roast for 15 to 20 minutes.
  5. While the sausage and vegetables roast, bring a pot of salted water to a boil. Cook the cheese tortellini according to the directions, shaving 1 minute off the cook time. Drain once it’s finished.
  6. Remove the pan from the oven. Add the tortellini to the sheet pan and toss well with the remaining 2 tablespoons of olive oil. Sprinkle on the parmesan cheese.
  7. Return the pan to the oven for 10 to 15 more minutes, tossing once or twice during cook time.
  8. Remove the pan. Serve immediately with a sprinkling of chives and more parmesan.
