Shepherd's Pie

Shepherd's pie is a traditional British dish, made from lamb or mutton and mashed potatoes that is similar to French hachis parmentier.

Ingredients

For the mashed potatoes
  • 2 lb potatoes
  • ½ cup whole milk
  • 6 tablespoons salted butter , diced
  • 1 pinch ground nutmeg
  • salt
  • freshly ground pepper
For the filling
  • 1½ lb ground lamb (or mutton)
  • 2 small carrots , finely diced
  • 2 onions , grated
  • 3 stalks celery , very finely diced
  • 3 cloves garlic , crushed
  • 2 tablespoons thyme
  • 2 teaspoons tomato paste
  • 1 teaspoon ketchup
  • 1 tablespoon flour
  • 2 cups red wine
  • 2 tablespoons Worcestershire sauce 
  • 4 tablespoons butter
  • salt
  • freshly ground pepper

Instructions

Mashed potatoes

  1. Cook the potatoes with their skin in a large pot filled with slightly salted boiling water.
  2. Once cooked, drain and peel.
  3. Purée them with a potato masher.
  4. Meanwhile, in a small saucepan, heat the milk until boiling.
  5. Gradually add the milk to the mashed potatoes and whisk everything.
  6. Stir in the butter while whisking.
  7. Season with nutmeg, pepper and salt.
Filling
  1. In a large Dutch oven, heat 3 tablespoons of butter and brown the onion over medium heat for 2 minutes, stirring regularly.
  2. Add the garlic and sauté for 1 minute.
  3. Add the carrots and celery. Mix well.
  4. Add the thyme, tomato paste, ketchup and flour. Season with salt and pepper. Mix well.
  5. Cook on low-medium heat for 5 minutes, stirring regularly.
  6. In a large skillet, heat the remaining butter and cook the meat for 10 minutes over medium heat, stirring very little so that the juice does not evaporate.
  7. Add the meat in the vegetable stew and add the red wine gradually. Mix well.
  8. Add the Worcestershire sauce and all the juice of the meat. Mix well.
  9. Cook for 1 minute.
  10. Pour all the mixture into a baking dish, spreading evenly and refrigerate for 1 hour.
Assembly
  1. Preheat the oven to 400 F (200˚C).
  2. Remove the dish from the refrigerator and gently cover the meat with the mashed potatoes.
  3. Spread evenly and, using a knife, make regular shapes on the top.
  4. Bake for 35 minutes.
  5. Let stand 10 minutes before serving.
