Ingredients

  • 1/2 cup unsalted butter , cold
  • 2 1/2 cups flour
  • 1 cup packed brown sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoons baking soda
  • 1/2 cup molasses
  • 1 cup boiling water

Instructions

  1. Preheat oven to 350 degrees and spray an 9x5 inch loaf pan with baking spray.
  2. Cut butter into small chunks then add to a large bowl with flour, brown sugar, salt and cinnamon.
  3. Using a pastry cutter, add in the butter until it resembles small crumbles.
  4. Remove 1/2 cup of the mixture in a small bowl and set aside.
  5. Add in baking soda to the large bowl and stir.
  6. Add molasses to boiling water and stir well until dissolved.
  7. Add to large bowl and stir well until combined.
  8. Pour batter into loaf pan and top with reserved crumble mixture.
  9. Bake for 55-60 minutes.
