Shredded Brussels Sprout Salad with Cranberries and Feta
Get your Winter salad on with this Shredded Brussels Sprout Salad with Cranberries and Feta!
Ingredients
- ½ zucchini diced
- ½ cucumber diced
- 10 Brussels sprouts coarsely grated or shredded, raw
- 2-4 TBSP dried cranberries
- 2-4 TBSP feta cheese crumbed or cubed
CAESAR DIJON DRESSING
- 1 TBSP Dijon mustard
- 1 TBSP caesar dressing all-natural, your favorite
- 1 tsp vinegar
- 1 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp basil dried
Instructions
- Get chopping!
- Cube your zucchini and cucumber [and feta if you're using a large brick!] and add to a large bowl. Next add a hearty handful or two of dried cranberies [or craisins!] and your feta if you haven't already added it.
- Grab your brussels sprouts and, using a box/cheese grater, coarsely grate them over the salad, leaving the ends behind.
- In a separate bowl, whisk together your dressing and pour over the salad.
- Toss to lightly coat and dig in!
- This salad tastes great straight from the mixing bowl and can also be served chilled!
