Shredded Chicken

My Easy Shredded Chicken recipe never disappoints! Perfectly moist and flavorful and is the perfect add-on to any recipe that calls for chicken.

Ingredients

  • 1  tablespoon olive oil
  • 1½ pounds  boneless skinless chicken breasts
  • 1  teaspoon  kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1  cup  chicken stock

Instructions

  1. Sprinkle chicken breasts with the salt and pepper.
  2. In a large non-skillet with a lid, heat the olive oil over medium heat. Add the chicken and sear for 4 minutes on each side.
  3. Add the chicken stock, reduce to medium-low, put the lid on the skillet and allow to simmer for 5-8 minutes. NOTE: Chicken should register 160-165 degrees (it will continue to cook when removed from heat).
  4. Remove the chicken from the skillet and allow it to rest for 3 minutes.
  5. Using two forks, shred the chicken to your desired consistency.
