Shrimp Pasta Salad
Shrimp Pasta Salad combines sautéed seasoned shrimp with boiled macaroni, sweet peas, corn, cherry tomatoes, and boiled egg pieces, all mixed in a dressing of mayonnaise, basil pesto, and yogurt. This blend offers a creamy, herbaceous salad featuring tender shrimp and fresh vegetables for a colorful, textured dish ideal for serving chilled.
Ingredients
- 300 g Shrimp (peeled)
- 400 g macaroni boiled
- 1 tbsp mayonnaise
- 4 tbsp basil pesto
- 2 tbsp yogurt
- 100 g sweet peas boiled
- 50 g sweetcorn
- 100 g cherry tomato cut in half
- 3 egg boiled, cut into 4 pieces
- salt
- black pepper
- extra virgin olive oil
Instructions
- In a bowl, put the shrimp, sprinkle with a little olive oil, season with salt and pepper and mix with a spoon.
- Place a pan over medium heat. Once heated, sauté the shrimp for 2 minutes on each side. Move the shrimp to a bowl and set aside.
- In the serving bowl, add the macaroni, mayonnaise, basil pesto, yoghurt, sweet peas, corn and cherry tomatoes. Season with salt and pepper and mix well with your hands, wearing disposable gloves.
- Place the shrimps and eggs over the salad and serve.
