Shrimp potato salad {Ensalada de papas con camarones}
This shrimp potato salad combines boiled diced potatoes and carrots with cooked shrimp, mayonnaise, and finely chopped onion and garlic. The salad is creamy and textured with tender shrimp and crisp vegetables, garnished with parsley for a fresh touch. It’s a fulfilling side or light main dish that brings a mild savory balance with optional lettuce, tomato, and avocado slices for serving.
Ingredients
- 4 cups potato about 4-5 medium sized potatoes, boiled and diced
- 2 ½ cups Shrimp about 1 lb, cooked
- 2 cups carrot about 6-7 medium sized carrots, boiled and diced
- 7 tbs mayonnaise
- 2 tbs onion finely chopped; white onion
- 2 garlic crushed - optional and feel free to adjust to your taste, cloves
- salt to taste
- 1-2 tbs parsley finely minced
Optional garnishes:
- lettuce leaves and sliced
- tomato leaves and sliced
- avocado slices
Instructions
- Mix all of the ingredients together.
- Sprinkle parsley on top and serve with lettuce and tomato slices.
