Ingredients

  • 1 box shrimp scampi SeaPak brand
  • 1 Tablespoon neutral cooking oil generic cooking oil
  • 1 onion chopped
  • 1 pint grape tomatoes halved
  • 5 green onions chopped
  • 2 Tablespoon lemon juice

Instructions

    Cup of Yum
  1. Heat a skillet on medium high heat.
  2. Add the oil and sautee the chopped onion for 2 minutes.
  3. Add the SeaPak Shrimp Scampi and prepare according to package instructions.
  4. Add the halved grape tomatoes at the same time as the Shrimp Scampi.
  5. Continue to stir the shrimp and tomatoes for 7-8 minutes.
  6. Then add in the chopped green onions and lemon juice, and cook 2 minutes more.
  7. Serve over rice or pasta.
