Shrimp Stir Fry with Asparagus and Grape Tomatoes

Ingredients

Sauce:
  • 2 tbsp soy sauce
  • 1 tbsp seasoned rice vinegar
  • 1 tbsp fresh ginger minced
  • 3-4 cloves of garlic minced
  • 1 tsp sesame oil
Stir Fry:
  • 1 tbsp vegetable oil
  • ½ lb asparagus trimmed and cut diagonally into 2-inch pieces
  • 1 cup grape tomatoes
  • 1 lb large shrimp cleaned and deveined
  • green onions chopped

  1. Make the sauce by combining the soy sauce, rice vinegar, ginger, garlic, and sesame oil in a bowl. Whisk until well combined.
  2. Heat the vegetable oil in a large sauté pan over medium-high heat. Add the asparagus and tomatoes and cook, stirring occasionally, for 5 minutes.
  3. Add the shrimp and cook for 2 minutes, flipping halfway until nearly cooked.
  4. Add the soy sauce mixture and cook, stirring often, for 1-2 minutes.
  5. Sprinkle with chopped green onions.
  6. Serve immediately with rice if desired. Enjoy.
