Ingredients
Sauce:
- 2 tbsp soy sauce
- 1 tbsp seasoned rice vinegar
- 1 tbsp fresh ginger minced
- 3-4 cloves of garlic minced
- 1 tsp sesame oil
Stir Fry:
- 1 tbsp vegetable oil
- ½ lb asparagus trimmed and cut diagonally into 2-inch pieces
- 1 cup grape tomatoes
- 1 lb large shrimp cleaned and deveined
- green onions chopped
Instructions
- Make the sauce by combining the soy sauce, rice vinegar, ginger, garlic, and sesame oil in a bowl. Whisk until well combined.
- Heat the vegetable oil in a large sauté pan over medium-high heat. Add the asparagus and tomatoes and cook, stirring occasionally, for 5 minutes.
- Add the shrimp and cook for 2 minutes, flipping halfway until nearly cooked.
- Add the soy sauce mixture and cook, stirring often, for 1-2 minutes.
- Sprinkle with chopped green onions.
- Serve immediately with rice if desired. Enjoy.
