Silken Tofu Breakfast Pudding

A simple and nutritious, low-glycemic breakfast pudding made with silken tofu, frozen berries, baby spinach and your sweetener of choice.

Ingredients

  • 1 pound silken tofu, drained
  • 1 ½ tablespoons chia seeds
  • 1 ½ cups frozen blueberries or mixed berries
  • 2 teaspoons lemon juice or 1 teaspoon apple cider vinegar
  • 1 to 2 tablespoons sweetener of choice, such as maple syrup or agave; or sub stevia or monk fruit and adjust amount as needed
  • 1 large handful of spinach or other raw green

Instructions

    Cup of Yum
  1. Combine all ingredients in a blender and blend until smooth. Pour into two serving dishes and refrigerate for thirty minutes. Can be eaten immediately but will be slightly less set.
  2. Top with berries, coconut, nuts, seeds, and/or nut butter, and enjoy!

Notes

  • Because of the blended raw ingredients this pudding is best eaten the day it's made.
  • Nutrition calculated without additional toppings and using a non-caloric sweetener.
