Ingredients

  • 1 ½ cups 195 grams all-purpose flour
  • 3 tablespoons brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ⅛ teaspoon ground cinnamon or pumpkin spice
  • 2 eggs
  • ¼ cup melted butter
  • 1 cup milk
  • ½ teaspoon vanilla extract
  • 2 medium ripe bananas mashed (about ¾ cup)
  • Additional butter or oil for cooking

Instructions

  1. In a small bowl, mix the flour, brown sugar, baking powder, salt, and cinnamon.
  2. In a separate, medium bowl, whisk the eggs, melted butter, milk, vanilla extract, and bananas.
  3. Fold in the dry ingredients, until there is no dry flour visible. The batter will be lumpy.
  4. Heat your electric griddle to 375°F (190°C) or turn your stovetop to medium heat. Melt butter on griddle or skillet.
  5. Using a small scoop, drop batter onto skillet in 1 tablespoon portions.
  6. Once the pancake begins to bubble, flip over to finish cooking. Serve hot.
