Ingredients
- 3 cloves garlic peeled
- 1 long red chili pepper chopped, optional, remove seeds if less heat desired
- 50 grams ginger 2-inch piece, peeled and roughly chopped
- 1/4 cup tomato paste
- 1 tbsp ground coriander
- 1 tsp cumin ground
- 1/4 cup olive oil
- 1 medium yellow onion
- 600 grams chicken thighs boneless, skinless, cut into 1-inch cubes
- 1 tsp salt fine sea salt
- 1 tsp black pepper fresh ground
- 2 oz. coconut milk 28 oz or 800 ml total
- 700 grams butternut squash pre-chopped frozen squash works well here, peeled, chopped into 1-inch pieces
- 200 grams green beans trimmed
- 4 cups rice steamed, cooked as per package instructions
- 1/2 cup mint fresh leaves, torn, for serving
