Ingredients

  • 3 cloves garlic peeled
  • 1 long red chili pepper chopped, optional, remove seeds if less heat desired
  • 50 grams ginger 2-inch piece, peeled and roughly chopped
  • 1/4 cup tomato paste
  • 1 tbsp ground coriander
  • 1 tsp cumin ground
  • 1/4 cup olive oil
  • 1 medium yellow onion
  • 600 grams chicken thighs boneless, skinless, cut into 1-inch cubes
  • 1 tsp salt fine sea salt
  • 1 tsp black pepper fresh ground
  • 2 oz. coconut milk 28 oz or 800 ml total
  • 700 grams butternut squash pre-chopped frozen squash works well here, peeled, chopped into 1-inch pieces
  • 200 grams green beans trimmed
  • 4 cups rice steamed, cooked as per package instructions
  • 1/2 cup mint fresh leaves, torn, for serving
