Ingredients
- 4 lices Bacon *Use bacon crumbles instead for less cooking time, optional
- 2 tbsp butter unsalted
- 1 onion diced
- 1 cup carrot peeled and diced
- 3 garlic minced, cloves
- 3 russet potato peeled and diced
- 2 cups ham diced
- 3 cups chicken broth or vegetable broth
- 1 cup cream coconut cream or cashew cream for dairy-free option, see notes
- 1 cup sweet corn kernels
- 2-3 green onions diced, optional for serving
Instructions
- Heat a skillet over medium high heat. Add bacon and cook until brown and crispy. Transfer to a paper towel-lined plate; set aside.
- In a large pot, melt the butter over medium-high heat. Add the onion, carrots, and garlic and sauté for 2-3 minutes until softened.
- Add the potatoes, ham, and broth to the pot. Bring to a boil, the reduce heat to medium-low and simmer for 15-20 minutes or until potatoes are soft.
- Add the cream and corn to the pot and allow it to cook for another 5 minutes until heated through.
- Serve immediately, garnish with bacon and green onion, if desired.
