Simple Creamy Ham and Potato Corn Chowder

Ingredients

  • 4 lices Bacon *Use bacon crumbles instead for less cooking time, optional
  • 2 tbsp unsalted butter
  • 1 onion diced
  • 1 cup carrots peeled and diced
  • 3 garlic cloves minced
  • 3 Russet potatoes peeled and diced
  • 2 cups ham diced
  • 3 cups chicken or vegetable broth
  • 1 cup cream coconut cream or cashew cream for dairy-free option, see notes
  • 1 cup sweet corn kernels
  • 2-3 green onions diced, optional for serving

Instructions

  1. Heat a skillet over medium high heat. Add bacon and cook until brown and crispy. Transfer to a paper towel-lined plate; set aside.
  2. In a large pot, melt the butter over medium-high heat. Add the onion, carrots, and garlic and sauté for 2-3 minutes until softened.
  3. Add the potatoes, ham, and broth to the pot. Bring to a boil, the reduce heat to medium-low and simmer for 15-20 minutes or until potatoes are soft.
  4. Add the cream and corn to the pot and allow it to cook for another 5 minutes until heated through.
  5. Serve immediately, garnish with bacon and green onion, if desired.
