Simple Greek Salad (No Lettuce!)

Ingredients

  • 1 English cucumber sliced
  • 1 onion cut into thin slices
  • 1 cup cherry tomato
  • 1 bell pepper cut into thin cubes
  • 10 oz feta cheese cut into cubes
  • 1 lemon
  • 1 tsp oregano dried
  • 1 tsp olive oil
  • salt
  • black pepper

Instructions

    Cup of Yum
  1. In a bowl, mix all ingredients together except lemon, oregano, and olive oil.
  2. In another bowl, pour the juice of one lemon, the olive oil, and the oregano. Salt and pepper to taste.
  3. Pour the vinaigrette over the salad.

Notes

  • If time allows, chill the salad for 30 minutes before serving.
