Simple Kale Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion diced
  • 1 carrot peeled and diced
  • 1 can tomatoes
  • 2 cups vegetable stock
  • 1 can cooked white beans drained
  • 1/2 tsp dried oregano
  • pinch smoked paprika
  • pinch Sea salt and black pepper
  • 1 bunch curly kale
  • parmesan grated

Instructions

  1. Cut the onion and carrot into small pieces. In a large pot heat the olive oil and sauté the onions and carrots for 5 minutes until cooked.
  2. Add the diced tomatoes, vegetable stock, and beans. Bring the mixture to a boil then reduce the heat. Simmer the soup for 10 minutes, then season with dried oregano, smoked paprika, salt, and pepper.
  3. Add the kale and simmer for 2 more minutes until the kale is tender. Taste the soup and season (if required) with more salt or pepper.
  4. Serve the kale soup with grated Parmesan. Enjoy!

Notes

  • Add your herbs and spices in stages.
  • Taste test constantly and adjust the herbs, salt, and pepper as you please.
  • Add the kale towards the end of cooking to preserve its color and texture.
