Ingredients
- 8 oz Pasta of Choice
- 1-2 tbsp olive oil
- 1 onion diced
- 3 cloves garlic
- 227 grams mushrooms
- 1 tsp salt
- 796 mL chopped tomatoes
- 4 cups spinach
- ¼ cup parmesan this is optional. I like that it thickens the sauce quickly.
- 2 cups shredded chicken
- 1 handful basil
Instructions
- Cook your pasta according to the directions on the packaging, reserving some pasta water.
- In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
- Then add in the sliced mushrooms and salt and continue to saute.
- Deglaze the pot with up to ½ cup pasta water and then add in the canned tomatoes. Let the sauce simmer for up to 10 minutes or until it has thickened to your liking.
- Add in the spinach and stir until wilted.
- Add in some parmesan to thicken some more if desired.
- Add in the pasta, shredded chicken and basil, mix to combine.
- Top with some parmesan and red pepper flakes if desired.
