Ingredients

  • 8 oz Pasta of Choice
  • 1-2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic
  • 227 grams mushrooms
  • 1 tsp salt
  • 796 mL chopped tomatoes
  • 4 cups spinach
  • ¼ cup parmesan this is optional. I like that it thickens the sauce quickly.
  • 2 cups shredded chicken
  • 1 handful basil

Instructions

  1. Cook your pasta according to the directions on the packaging, reserving some pasta water.
  2. In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
  3. Then add in the sliced mushrooms and salt and continue to saute.
  4. Deglaze the pot with up to ½ cup pasta water and then add in the canned tomatoes. Let the sauce simmer for up to 10 minutes or until it has thickened to your liking.
  5. Add in the spinach and stir until wilted.
  6. Add in some parmesan to thicken some more if desired.
  7. Add in the pasta, shredded chicken and basil, mix to combine.
  8. Top with some parmesan and red pepper flakes if desired.
