Ingredients

  • 4 Russet potatoes quartered
  • 1 yellow onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic
  • 1 teaspoon paprika
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat a skillet to medium-high heat.
  2. In a large bowl add your potatoes, onion, bell peppers, olive oil, salt, pepper, garlic, paprika, and Italian seasoning.
  3. Toss them to coat in the seasonings.
  4. Add them to your heated skillet and let them cook for 15-20 minutes, or until tender and crispy.
