Skillet Steak Dinner

Ingredients

  • 2 new york steaks 2 inches thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter divided
Vegetables
  • 4 ounces white or cremini mushrooms quartered
  • 1/2 pound asparagus trimmed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  1. Remove 2 New York steaks from the refrigerator and any packaging and let sit at room temperature on a plate or cutting board for at least 30 minutes.
  2. In a small bowl, stir together 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon white pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder. Rub both sides of each steak with the rub mixture to coat.
  3. Preheat oven to 375 degrees Fahrenheit. Preheat a heavy, oven-safe skillet over high heat until it is smoking hot.
  4. Add in 1 tablespoon vegetable oil and 1 tablespoon butter. Sear steaks in the hot pan for 2-3 minutes per side. Turn the steak onto its side and render the fat by searing it for 2-3 minutes as well. Remove steaks from pan and set aside briefly on a clean plate. 
  5. Add in the remaining 1 tablespoon butter to the skillet. Add in the quartered 4 ounces white or cremini mushrooms and 1/2 pound asparagus. Season with 1/4 teaspoon salt1/4 teaspoon black pepper and toss in the oil and butter over medium-high heat for 2 minutes. Scoot the vegetables to the side and return the steaks to the pan. 
  6. Slide the skillet into the preheated oven to finish cooking, about 10-15 minutes for medium rare, depending on the exact size and thickness of your steak. Use a meat thermometer to ensure accuracy.
