Skinny Lasagna Soup

Ingredients

  • 2 teaspoons olive oil
  • 1 onion , chopped
  • 1 green bell pepper , chopped
  • 3 cloves garlic , minced
  • 32 ounces vegetable broth
  • 1 crushed tomatoes 15-ounce can
  • 1 diced tomatoes petite, 14 ½-ounce can
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper
  • 4 ounces whole-wheat lasagna noodles about 4 noodles, broken
  • ½ cup basil chopped, fresh
  • 3 tablespoons Parmesan Cheese grated
  • ½ cup mozzarella cheese reduced-fat, shredded
  • bread for serving

Notes

  • This recipe makes about 8 one cup servings. The original recipe called for meat too, so if you are a meat eater you could add in sausage in the beginning when you are cooking the peppers and onions. Recipe adapted from thedeenbros.com
