Skioufichta (Cretan Pasta) with Spinach and Yogurt

This is a delicious Greek pasta dish using skioufichta, a traditional handmade Cretan pasta. Skioufichta is usually made with whole-wheat flour, water, salt and olive oil or butter.

Ingredients

  • 500 g skioufichta traditional Cretan pasta
  • ½ onion cut into thin vertical slices
  • 1 clove garlic finely chopped
  • 400 g spinach coarsely chopped
  • 170 g strained yogurt
  • 100 g parmesan grated
  • salt
  • pepper
  • extra virgin olive oil

Instructions

  1. Place a pot full of water over high heat. Once boiled, salt and add the skioufichta, boiling 2 minutes less than the time indicated on the package, so that they come out al dente.
  2. Place a pan over high heat. Once heated, add a little olive oil, the onion and sauté for 1-2 minutes.
  3. Add the garlic, spinach and lower the heat to medium. Sauté, stirring with a wooden spoon, until the spinach loses its moisture.
  4. Add the skioufichta, season with salt and pepper, stir and remove from heat.
  5. Add the yogurt, parmesan, stir again and serve warm.

Notes
