Ingredients

  • 1 red onion medium
  • 100 ml white wine
  • 100 g cherry tomato
  • 100 g potato leftover
  • 100 g onion
  • 100 g pasty filling
  • 1 Cup corn frozen
  • 2 Cups rotisserie chicken leftover
  • 1 mixed beans canned, for taco
  • 1 black beans canned
  • 1 canned tomatoes
  • 1 Tsp Garlic puree
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp Mexican seasoning
  • 1 Tbsp cumin
  • 1 Tbsp Coriander or cilantro
  • ½ Tsp cayenne pepper
  • salt
  • black pepper
For Serving:
  • tortilla wraps leftover
  • 1 Tbsp Mexican seasoning
  • 1 Tbsp extra virgin olive oil
  • 2 avocado

Instructions

  1. Peel and dice your red onion. Load into the instant pot with extra virgin olive oil and sauté. After a 2-3 minute sauté, press cancel and stir in garlic puree and then deglaze with white wine.
  2. Dump in all your other main ingredients, refill your tinned tomatoes can with water and shake, and pour the tomato water in, stir and place the lid on the instant pot pressure cooker.
  3. Cook for zero minutes and do a quick pressure release.
  4. In the meantime, cut your tortilla wraps into strips, load in a bowl with the Mexican seasoning and extra virgin olive oil and mix with your hands.
  5. Load into the air fryer basket and air fry for 5 minutes at 200c/400f.
  6. When the instant pot is done, do a quick pressure release, stir, and load into soup bowls. Add crispy tortilla strips and sliced avocado over and serve.

Notes

  • Quantities. This sloppy joes recipe is enough to feed 4-5 people with one bread roll of sloppy joes each. You can double ingredients for a bigger batch and keep the same cook time.
  • Swaps. We used up carrots, celery, and onion that we already had in. You can do swaps based on what veggies you have that need using.
