Sloppy Joe Pasta

This one pot sloppy joe pasta is a delicious twist on the classic sloppy joe sandwich. A pasta dish recipe in 35 minutes, perfect for a quick weeknight meal.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion diced
  • 1 red bell pepper diced
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 cups chicken stock
  • 24 ounces strained tomatoes 1 jar (or tomato purée)
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce 
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 10 ounces penne or any short pasta
  • 1 tablespoon chopped parsley optional, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and red pepper, and sauté until they are softened, about 3-4 minutes. 1 tablespoon extra virgin olive oil, 1 medium yellow onion, 1 red bell pepper
  2. Add the ground beef, salt and pepper. Cook, breaking up the beef, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if needed. 1 pound lean ground beef, 1 teaspoon salt, 1/2 teaspoon ground black pepper
  3. Add the chicken stock, strained tomatoes, brown sugar, vinegar, Worcestershire sauce, chili powder, garlic powder. Stir until everything is well combined. 3 cups chicken stock, 24 ounces strained tomatoes, 2 tablespoons brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon Worcestershire sauce, 1 tablespoon chili powder, 1 tablespoon garlic powder
  4. Stir in the penne, ensuring it is fully submerged in the sauce. 10 ounces penne
  5. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is tender and has absorbed the flavors.
  6. Remove from heat. Sprinkle with chopped parsley. Serve warm. 1 tablespoon chopped parsley
