Sloppy Joes Pasta

Ingredients

  • 16 ounces pasta large shell
  • 1 pound ground beef lean
  • 1 tablespoon butter unsalted
  • 1 yellow onion , chopped
  • 1 green bell pepper , chopped
  • 1 clove garlic , minced
  • 1 tablespoon yellow mustard
  • 8 ounces tomato sauce
  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper ground
  • 2 cups cheddar cheese , shredded

Instructions

  1. Heat oven to 350 degrees.
  2. Cook shell pasta 1 minute shy of directions on the box, then drain and set aside.
  3. Add the ground beef to a large skillet on medium-high heat and brown until cooked through, about 5-6 minutes.
  4. Drain the fat, lower heat to medium and add the butter, onions and bell pepper to the pan.
  5. Cook vegetables with the beef until onions and green bell peppers are translucent, about 6-8 minutes.
  6. Add the garlic, mustard, tomato sauce, ketchup, brown sugar, salt, black pepper, to the pan and cook 3-5 minutes until slightly thickened.
  7. Add the ground beef mixture to a large mixing bowl.
  8. Stir in the cooked pasta and coat well.
  9. Pour half the mixture into a 9x13 baking dish and top with 1 cup shredded cheddar cheese.
  10. Add remaining pasta mixture and top with remaining cheese.
  11. Bake for 25-30 minutes.
