Slow Cooker Asian Lettuce Wraps

These slow-cooker Asian lettuce wraps are packed with savory Asian chicken and fresh veggies wrapped in crunchy lettuce. They're so delicious that they reminded me of a nice restaurant.

Ingredients

  • 2 pounds ground chicken see notes
  • 3 green onion divided
  • 1 (8-ounce) water chestnuts drained and chopped, canned
  • 1 cup carrot shredded
  • 1 cup edamame frozen, shelled
  • 4 teaspoons soy sauce
  • 1 tablespoon hot mustard or spicy mustard, Chinese-style
  • 2 teaspoons teriyaki sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon black pepper ground
  • 1 (14.5-ounce) chicken broth canned
  • ¼ cup hoisin sauce
  • 12 leaves butter or iceberg lettuce
  • peanut sauce optional for topping
  • sweet chili sauce optional for topping
  • sesame seeds for garnish
  • green onion for garnish

Instructions

  1. Add 2 pounds ground chicken, the whites of 3 green onions, 1 (8-ounce) can water chestnuts, 1 cup shredded carrots, 1 cup frozen shelled edamame, 4 teaspoons soy sauce, 1 tablespoon Chinese-style hot mustard,2 teaspoons teriyaki sauce, 1 teaspoon rice vinegar, and ½ teaspoon ground black pepper to the slow cooker. Pour 1 (14.5-ounce) can chicken broth over the top.
  2. Cook on LOW for 4-5 hours or HIGH for 2-2½ hours.
  3. Strain out the excess liquid and break apart the ground chicken. Stir in ¼ cup hoisin sauce and the green part of the green onions, chopped.
  4. Serve with 12 leaves butter or iceberg lettuce! Top with sweet chili sauce, , peanut sauce, and sesame seeds, if you like.
