Slow Cooker Banana Pumpkin Oatmeal Bars

Slow Cooker Banana Pumpkin Oatmeal Bars combine hearty oats, ripe bananas, honey, canned pumpkin, and chocolate chips for an easy, healthy breakfast recipe that's made in your slow cooker!  Just cut into squares for a delicious start to your busy morning!

Ingredients

  • 2 banana very ripe
  • 2 cups old-fashioned oats
  • 1/2 cup pumpkin not pumpkin pie filling) see post for alternative, canned
  • 1/4 cup honey
  • 1.5 tsp. vanilla extract
  • 1/8 tsp. salt sea salt
  • 1/4 tsp. ground cinnamon
  • 1/2 cup chocolate chips I like semi-sweet. Feel free to use dark chocolate or milk chocolate, optional

Instructions

  1. Either spray your slow cooker with cooking spray or line it with parchment paper. Mash your bananas in a medium sized mixing bowl. To the bananas, add the rest of the ingredients. Stir until well-combined.
  2. Pour the mixture into your slow cooker and use a rubber spatula to smooth the top of the oatmeal into a level height. I like to press a couple chocolate chips into the top.
  3. Place the lid on the slow cooker and cook for 2 3/4 -3 hours on low. If you can, rotate the ceramic insert at the half point, then continue cooking. When they're done, cut into squares and enjoy warm!
  4. For best results, reheat leftovers in the microwave before eating to soften the oatmeal bars and make the chocolate nice and melty. Enjoy!
