Ingredients

  • 2 pounds chicken breast boneless skinless (thighs work well too
  • 1 large onion (thinly sliced)
  • 2 cups peach fresh or frozen, sliced
  • 1 cup barbecue sauce (homemade or store-bought)
  • 3 chipotle peppers in adobo sauce (minced)
  • 12 ounces beer (optional)

Instructions

    Cup of Yum
  1. Place all ingredients in a slow cooker, chicken on top, and cook on Low for 8 Hours or High for 4 Hours.
  2. Shred chicken with a fork before serving.

Notes

  • Serve on seedy rolls as a BBQ chicken sandwich with toppings of choice, or on top of brown rice or a baked sweet potato.
  • Can also be made in the Instant Pot, manual pressure cook on high for 15 minutes.
