Slow Cooker Chicken Parmesan

This Slow Cooker Chicken Parmesan uses chicken breasts simmered in a tomato sauce made with crushed tomatoes, sauce, paste, garlic, and Italian herbs until tender. It’s topped with shredded mozzarella, grated Parmesan, and toasted Italian-style breadcrumbs, adding creamy cheese layers and a crunchy topping. Ingredients

  • 28 ounce crushed tomatoes canned
  • 8 ounce tomato sauce canned
  • 4 ounces tomato paste
  • 6 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried sweet basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 chicken breast 2
  • 2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup breadcrumbs Italian style
  • 1/2 tablespoon olive oil

Instructions

  1. Combine crushed tomatoes, tomato sauce, tomato paste, garlic, seasonings, salt, and pepper in the slow cooker; mix well.
  2. Place chicken breasts in the sauce.
  3. Cook on low for 4-6 hours.3
  4. Remove chicken from slow cooker, and stir sauce.
  5. Top chicken breasts with sauce and cheeses. 
  6. In a small pan, heat the oil over medium heat for a minute.
  7. Add the breadcrumbs, and cook, stirring regularly, for about 5 minutes, or until toasted.
  8. Serve chicken topped with toasted breadcrumbs.

Notes

  • Use larger chicken breasts for juicier results; cutlets or tenderloins may dry out.
  • Cooking time may vary depending on chicken breast size and thickness.
  • Tomato sauce here is simply pureed tomatoes combined with seasonings.
