Slow Cooker Chicken Parmigiana Sandwiches

Ingredients

  • 28 oz tomatoes crushed
  • 14.5 o tomatoes diced
  • 2 medium onions
  • 2 cloves garlic
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon oregano
  • 2 bay leaves
  • 1 teaspoon basil
  • 1 teaspoon salt
  • 3 chicken breast skinless boneless
  • grated Parmesan cheese
  • 8 sandwich rolls

Instructions

  1. Add the crushed tomatoes and diced tomatoes to the slow cooker.
  2. Chop the onions and garlic and add to the slow cooker.
  3. Add parsley, oregano, bay leaves, basil and the sauce all together.
  4. Place the chicken
  5. Set chicken breasts on top of the sauce and cover and cook on low for 6 hours.
  6. Stir the mixture to break up the chicken into shreds.
  7. Serve on rolls and top with a generous serving of Parmesan cheese.
