Slow Cooker Chicken Posole
Slow Cooker Chicken Posole is a hearty Mexican stew made with bone-in chicken thighs, hominy, green chiles, and a mix of aromatics like onion, poblano pepper, garlic, and tomatillo. The spices cumin and oregano add earthiness while fresh cilantro and lime juice brighten the dish. Ingredients
- 4 chicken thigh bone-in, skinless
- 4 cups chicken stock
- 1 white hominy canned, drained
- 2 green chiles diced, canned
- 1 sweet onion diced
- 1 poblano pepper diced
- 3 cloves garlic minced
- 2 teaspoons cumin ground
- 1 teaspoon oregano dried
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tomatillo diced, medium
- ½ cup cilantro fresh, chopped leaves
- 1 tablespoon lime juice freshly squeezed
For serving
- cabbage shredded
- radish sliced
- queso fresco crumbled
- tortilla chips
- lime wedges
Instructions
- Place chicken into a 6-qt slow cooker. Stir in chicken stock, hominy, green chiles, onion, pepper, garlic, cumin and oregano; season with salt and pepper, to taste.
- Cover and cook on low heat for 6-8 hours. Remove chicken and let cool before dicing into bite-size pieces, discarding bones.
- Stir in tomatillos, cilantro, lime juice and chicken into the slow cooker; season with salt and pepper, to taste.
- Serve immediately with desired toppings.
