Ingredients
- 3 lb. boneless, skinless chicken breasts
- 1 tbsp Knorr Tomato Bouillon with Chicken
- 1 tbsp chili powder
- 2 tsp. smoked paprika
- 1 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 7 oz. can chipotles in adobo
- 1/4 cup salsa
- 1/2 yellow onion sliced
- 4.5 oz. can diced green chiles undrained
- chopped cilantro optional garnish
Instructions
- Add chicken breasts to slow cooker. Top with bouillon, all of the spices, salsa, onion, and canned green chiles. Open the can of chipotles in adobo and dice the chiles. If you like spicy food, add the diced chiles and the sauce from the can to the slow cooker. To make less spicy, you could use some of the sauce instead of the chiles, or use a small amount of chiles.
- Cook on low for 4-6 hours, or until the chicken reaches 165° degrees. My chicken is done before 4 hours, but each slow cooker works differently.
- Using 2 forks, shred the chicken into your desired texture. Mix it in well with everything in the slow cooker. Top with cilantro if desired. This meat is excellent on taco salads, in burritos, on nachos, in quesadillas, in tacos, and as a filling for enchiladas. Enjoy!
