Ingredients
Chicken Tacos
- 1 tsp ground cumin
- 1 tsp Litehouse Instantly Fresh Cilantro
- 1 tsp kosher salt
- 1 lb boneless, skinless chicken breast
- 8 small corn tortillas
Lime Cumin Dressing
- ½ cup olive oil
- ¼ cup lime juice freshly squeezed
- ¼ cup rice vinegar
- 1 tsp ground cumin
- ½ tsp salt
- 1 clove garlic crushed
Instructions
- In a small bowl, combine the cumin, cilantro and salt.
- Rub this mixture on the chicken breast and place in the slow cooker.
- Combine the ingredients to make the lime cumin dressing and pour over the chicken in the slow cooker.
- Cook on low for 6-8 hours, or on high for 3-4 hours.
- Remove the chicken and shred, then place back in the sauce in the slow cooker and toss.
- Serve on corn tortillas, or tortilla chips for mini tacos, topped with avocado, fresh cilantro, jalapeños, grated cheese or the toppings of your choice.
