SLOW COOKER COOL RANCH CHICKEN TACOS

These Slow Cooker Cool Ranch Chicken Tacos are a breeze to make and bursting with flavor. Tender, shredded chicken infused with cool ranch seasoning and slow-cooked to perfection, makes taco night a breeze.

Ingredients

  • 1.5-2 pounds boneless, skinless chicken breasts or thighs
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • ½ cup chicken broth
  • Optional: ¼ cup salsa or diced tomatoes (for added moisture and flavor)
For serving:
  • Taco shells or tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, avocado, salsa, cilantro, lime wedges

  1. Combine ingredients: In a slow cooker, combine the chicken breasts or thighs, ranch seasoning mix, taco seasoning mix, chicken broth, and optional salsa or diced tomatoes.
  2. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and shreds easily.
  3. Shred chicken: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the juices.
  4. Serve: Serve the shredded chicken in taco shells or tortillas with your favorite toppings, such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, avocado, salsa, cilantro, and lime wedges.

Notes

  • Chicken: Chicken thighs will result in a more tender and flavorful result than chicken breasts.
  • Seasoning: You can adjust the amount of seasoning to your liking. If you prefer less heat, use a low-sodium taco seasoning or reduce the amount of taco seasoning.
  • Liquid: The chicken broth is essential to keep the chicken moist during the slow cooking process. The optional salsa or diced tomatoes also add moisture and flavor.
  • Toppings: Get creative with your toppings! Consider adding pickled onions, jalapenos, or a drizzle of hot sauce.
