Slow Cooker Creamy Lemon Chicken

The bright flavors of fresh lemon in a buttery, garlicky, cream sauce make Slow Cooker Creamy Lemon Chicken a delectable chicken dish that is perfect over noodles or rice!  This low-carb recipe is also great served over cauliflower rice or a vegetable medley!

Ingredients

  • 2 lb. boneless, skinless chicken breasts
  • 1 tbsp lemon pepper
  • 1/3 cup lemon juice (approx 2-3 lemons)
  • 8 oz full fat cream cheese
  • 3 garlic cloves minced
  • 5 tbsp butter

Instructions

  1. Place chicken in slow cooker and sprinkle lemon pepper over it. My lemon pepper has salt in it. If yours doesn't, add your desired amount of salt.
  2. Add the garlic and fresh lemon juice to the chicken. Top the chicken with butter and cream cheese and cook it on low for 4 hours. 
  3. Remove the chicken from the slow cooker and set it aside. Use a silicone whisk (so you don't scratch the ceramic) to break up the cream cheese and incorporate it with the liquids in the slow cooker until it's nice and smooth.
  4. Shred or chop your chicken to your desired texture and add it back to the slow cooker with the sauce. Excellent served with orzo, rice, pasta, and roasted vegetables. Optional garnishes: parmesan cheese, crushed red pepper flakes, minced parsley. Enjoy!
